SALMON WITH CITRUS HERB SAUCE
- INGREDIENTS
- 2 1/2 cups of water
- 1 cup brown rice
- 1/2 cup white wine
- 1lb salmon steak
- 2/3 cup orange juice
- 1/4 cup shallots, minced
- 1 tsp dried dillweed
- 1 tsp dried rosemary
- 1 tsp dried basil
- 1 tsp mustard powder
- 1 tsp lemon pepper
- DIRECTIONS
- Preheat oven to 350 degrees. In a saucepan, bring water and rice to a boil. Stirring, reduce heat and simmer covered for 20 minutes.
- In a large pan, add enough water just to cover bottom of pan. Stir in the white wine. Lay the salmon fillet in the pan, pink side up. Place the cooked rice around the fish.
- Pour the orange juice over the fish and rice.
- In a small bowl, combine shallots and all herbs and then sprinkle over fish and rice.
- Cover with aluminum foil. Bake in the preheated oven for 30-40 minutes or until fish is flaky.
